Mứt khoai lang tẩm dừa có vị bùi bùi của khoai lang, béo của dừa nạo sấy và ngọt dịu của đường. Đặc biệt sự góp mặt của gelatine giúp món mứt thêm cứng cáp và định hình như ý.
Khoai rửa sạch rồi luộc hoặc hấp chín, sau đó gọt vỏ khoai lang và cắt thành từng miếng nhỏ. Dùng máy xay sinh tố xay khoai cho thật nhuyễn và mịn tiếp theo ta cho đường vào và đánh cho thật đều.
Bột gelatin hoà với nước sôi cho tan đều và đổ vào cùng hỗn hợp khoai. Tiếp theo, cho khoai vào chảo rồi cho phần bột ngô đã chuẩn bị vào đảo đều, bắc lên bếp sên. Sên mứt chỉ để lửa nhỏ và đảo liên tục từ dưới lên trên tránh khoai bị cháy đáy. Ta đã có hỗn hợp mứt khoai dẻo thơm ngon bổ dưỡng.
Đợi đến khi khoai bớt nóng thì bắt đầu nặn, đeo găng tay thực phẩm nặn thành hình kén tằm với kích cỡ vừa phải rồi lăn qua lớp cơm dừa.
